This year I have resolved to manage my time better and not be wasteful with the minutes I have every day. That being said, I have found that meal planning/prepping has made my weekdays go so much smoother. I set aside some time Sunday afternoon and prepare a few lunches that I can just grab and head off for my day, whether it be work, errands or projects. This makes eating healthy easier, as well as freeing up those few minutes it would have taken to make lunch. I have created two easily assembled and healthy meals that require ZERO cooking:
Bruschetta is one of the most delicious and easily made bread toppings out there. All it requires is tomatoes, garlic, a little olive oil and basil. From there you can make any combination of ingredients to spice it up. The bruschetta recipe I used were the above base ingredients as well as a little red onion and some fresh pesto. This paired with a nice crunchy toast or cracker of your choice, makes a delicious and satisfying snack. When you add a selection of your favorite pepperoni or dried sausage along with cheese it creates a superb lunch that all your coworkers will envy.
Basil Pesto Bruschetta Ingridients
1 c. Grape or Cherry tomatoes, quartered
2 cloves of garlic (add more if you like garlic)
¼ c. red onion
2 tbsp fresh basil pesto (You can use jarred if you wish)
Salt/Pepper to taste
- Combine all ingredients into a medium bowl and gently stir until everything is coated in the pesto.
- Spoon onto bread or crackers and enjoy.
The second option, to me, is the simplest lunch prep that could ever come along. You simply take a tortilla (or wrap of your choice), spread with your preference of sandwich spreads (I used chipotle mayonnaise), along with lunch meat and the cheese of your choice. Pair this with your favorite chips (I used dill lentil chips) and some veggie sticks.
Voila! You have a quick, simple, delicious and healthy lunch that is sure to satisfy.
