We all occasionally get a craving for comfort food, like the kind our mom’s used to make when we were kids. My mother always made chicken pot pie and it has always been a favorite of mine since I was knee high to a grasshopper. It is so soothing and pretty inexpensive to make. What happens though, when you are no longer able to enjoy your favorite comfort food? If you are on a special diet, have dietary restrictions or developed allergies? You adapt.
Can’t consume dairy? Use dairy alternatives. Allergies to gluten? Find delicious other options. Don’t want to eat carbs or fat? Substitute other ingredients that allow all the richness without the unwanted aspects. This can be difficult and may take a bit of time, but if it means you get to enjoy your mom’s chicken pot pie again it is all worth it.
